Royal Icing Recipe.
You will need:
1 & 1/2 cups sifted confectioners' sugar. |
1 egg white. |
1 teaspoon liquid glucose. |
4 drops lemon juice. |
Directions:
Sift the confectioners sugar through a fine sieve. Melt the glucose. Beat the egg white slightly using a wooden spoon; gradually add the confectioners' sugar, beating well. Add the lemon juice and melted glucose and beat until the icing remains in a point when the spoon is drawn up from it. The icing should become glossy and stiff by beating rather than by the addition of extra confectioners' sugar. If white icing is required add a few drops of blue food colouring. Cover with a damp cloth until needed to prevent drying and crusting.
