Mocha Chunk Cookies Recipe.
You will need:
2 & 1/2 cups all-purpose flour. |
1/2 teaspoon baking soda. |
1/3 cup unsweetened cocoa powder. |
1/4 teaspoon salt. |
2 teaspoon instant dark coffee. |
2 teaspoons coffee liquer. |
1 cup white sugar. |
3/4 cups dark brown sugar. |
1 cup softened butter. |
2 large eggs. |
2 cups semisweet choc bar (chopped). |
Directions:
Preheat oven to 300 degrees F.
In a medium bowl combine flour, cocoa, soda and salt. Mix well with a wire whisk and set aside. In a small bowl dissolve coffee crystals in coffee liquer and set aside.
In a large bowl blend sugars with an electric mixer at medium speed. Add butter and mix to form a grainy paste. Scrape down sides of bowl. Then add eggs and disolved coffe crystals, beat at medium speed until smooth. Add the flour mixture and coarsely chopped chocoalte chunks, and blend at low speed until just combined. Do not overmix.
Drop by rounded tablespoonfuls onto ungreased cookie sheet, 2 inches apart. Bake for 23-25 minutes.
