Coconut Cake Recipe.
You will need:
1 cup shredded coconut. |
1/2 cup milk. |
1 cup less 2 tablespoons butter. |
1 cup sugar. |
2 eggs. |
1 teaspoon vanilla extract. |
1 & 3/4 cups all-purpose flour. |
2 teaspoons baking powder. |
Directions:
Combine the coconut and milk and leave to soak for one hour. Line a 9 x 3 inch spring form pan with wax paper, grease it, and coat with flour. Preheat oven to 350 F. Cream the butter and sugar until light, white and fluffy. Beat the eggs and add one third ar a time to the creamed mixture, beating well after each addition.
Beat in the vanilla extract. Gradually add the coconut mixture. Sift the flour and baking powder into the creamed mixture. Spread into the prepared pan. Bake for 50 minutes. Stand for 5 minutes before turning out onto a wire cooling rack to cool.
